I learned how to boil chicken from my Nigerian husband, and now I never cook chicken any other way. This gives it so many flavors and it is good with almost anything!
Chicken pieces (I like drum sticks or thighs, but any type of chicken works fine)
Salt to taste
2 TBS Curry
½ – 1 TBS Cayenne Pepper
1 TBS Thyme
1 Maggi Cube (or other bouillon cube)
Put chicken in a large pot and cover with water. Bring to a boil on medium high. Add all the spices and let cook 20 to 30 minutes, or until cooked. Use for various recipes (some recipes call for the remaining broth as well).
