Nigerian Eggs

When we first met, my husband loved to make me these eggs for breakfast with pancakes, or for lunch on buttered bread. This is they way the Africans do it. Now it has become my responsibility to make them, because he claims I make them better than he does. If only I were African… how great they would be then!


3 TBS oil
¼ C purple onions, thinly sliced
1 Tomato, diced
Salt to taste
1 tsp. Cayenne pepper
1 tsp. garlic powder
4 Eggs


Heat oil over medium high in a frying pan. Add onions, tomato, cayenne and salt then fry until onions are soft. Meanwhile crack eggs into a bowl and beat. When onions are soft pour eggs into the frying pan and scramble.
Serve eggs on bread, toast or on their own.
My Concoction option:
Once you have added the eggs, cook them until they are not runny but still a little wet. Then add hash browns and cook everything until browned.
