Poverty Meal

I found this recipe – it is cheap and filling. I did make a few additions, however. :) We had it for dinner one night and we loved it! Limi didn’t think one bowl would fill him because he eats a lot… but it did. :) Budget saver!


1/2 lb Ground Beef
1/2 TBS Onion powder (or 1/4 cup chopped onions)
1/2 TBS Garlic Powder (or 1 clove garlic)
Salt and pepper to taste
1/2 cup Kidney beans
1/2 cup corn kernels
1 can diced tomatoes
1 can (14.5 oz) water
1/4 cup spaghetti sauce (or tomato sauce)
1 cup elbow macaroni


In a large pan, brown ground beef with garlic, onion, salt and pepper. Add beans, corn, tomatoes, water, spaghetti sauce and macaroni. Let it simmer on medium-high, stirring occasionally, for 15 to 20 minutes, or until macaroni is soft.
Additional add-ins:
1/2 cup corn kernels
Mozzarella cheese (on top)
Taco Seasoning

  1. Yum! This is similar to Grandma Jencks' recipe for goulash. At least I think it came from Grandma Jencks. My mom always made it and now I always make it. I haven't used the spaghetti sauce before. This looks yummy!
