Corn Bread Tacos

This recipe was inspired by my Vegetarian friends, when I was about 12, who always seemed to have the most random foods to fill their pantry. One day we were trying to make something for lunch but only found corn bread and re-fried beans in the pantry. So there was lunch! It seemed like a good start to me, so I went home and completed the dish. Introducing, Corn Bread Tacos!


1 box of corn bread
1 can re-fried beans
1/2 cup milk
1/2 cup cheddar cheese
cheddar cheese
Sour Cream
Hot sauce


Bake corn bread according to the directions on the box. In a sauce pan, combine milk and re-fried beans. Heat over medium heat until hot and smooth. Then add 1/2 cup cheese, stir and allow to melt.
Cut Corn Bread into squares and cut each square in half horizontally (like a dinner roll). For each serving, cover each side of the corn bread with bean mixture and top with desired toppings.
