I found these the same time as my Mini Pancake Dippers. Again, the possibilities are endless! Enjoy!
1 cup half-and-half
Non-stick cooking spray
Preheat the oven to 350 F. In a mixing bowl, combine eggs, half-and-half, salt and pepper. Beat ingredients together. Spray a muffin pan and pour the egg mixture in, filling the cups about 2/3 full. Top each cup with Parmesan cheese. Bake for 20-25 minutes, or until eggs are cooked and puffy. Remove from muffin pan and serve with salsa or your favorite omelet sauce.
Makes 12 Mini Omelet Dippers.
You can add other toppings to the omelet before cooking (this is just the basic omelet recipe).
Cooked bacon or sausage, chopped vegetables, or other cheeses would be good!
Serve with Mini Pancake Dippers!
