I thought they were cute when I first saw them, but only after I made them myself did I fully comprehend their endless possibilities! Bring them to a party or potluck, stuff them in your purse or back-pack for an on-the-go snack, bring them on a picnic… They’re wonderful!
Preheat the oven to 350 F. Spray a muffin pan with non-stick cooking spray. Fill each muffin cup 2/3 full with pancake batter. Bake in the oven for 12-15 minutes, or until the edges are golden brown (don’t expect the top’s to get too brown). Remove muffin pan from the oven and spread butter over each mini pancake. Remove from the muffin cups and serve with syrup for dipping sauce.
Makes 12 Mini Pancake Dippers
You can add mix-ins to the mini pancakes, such as fruit, chocolate chips, syrup, jam, before cooking.
These are good served with Mini Omelet Dippers!
