Spanish Rice (Real)

I LOVE Spanish Rice! But only the real stuff that you get when you go to Mexico, or to Mexican restaurants. Whenever I search recipes, however, I get the lame-o recipes that just tell you to add salsa to the rice before cooking it. That’s not real Spanish rice, silly. So finally, I found one of my Hispanic friends who can cook Spanish rice and asked for the recipe. Here it is folks!


3 TBS lard (oil works too)
1 cup long-grain white rice
1/2 cup chopped onions
1/2 tsp Cumin powder
1/2 tsp Cayenne pepper
1/2 tsp garlic powder
1/2 cup tomato sauce
2 cups chicken broth


In a large sauce pan, over medium (or medium-high) heat, heat oil. Add rice and onions and stir constantly until the rice begins to brown slightly, and the onions are soft. Add the spices and mix together. When the rice is becoming golden brown, add tomato sauce and chicken broth. Stir together and bring to a boil. Once boiling, reduce heat to low, and cover pot with a lid. Cook 20-25 minutes, without stirring, or you will ruin it. Once rice is cooked, fluff with a fork and serve!
