Blueberry Sauce

The sauce we first made for the Blueberry Stuffed French Toast was really good, but so loaded full of sugar! I felt guilty making it because it was a cavity infestation waiting to happen… So I found a new blueberry sauce, altered it a little to my liking, and gave it a try! Limi is really attached to his blueberry stuffed french toast so it was risky business trying to change the sauce on him, but even he thought it was really good, and consented to letting me use this recipe on a regular basis, instead. 


2 cups blueberries
1/3 cup sugar
1/2 cup orange juice
1/4 cup water
1 TBS cornstarch


Combine all ingredients and warm over medium heat until blueberries are thawed (if using fresh blueberries then this step can be skipped). Increase heat to medium-high and bring to a boil. Simmer until the sauce is a nice purple color and then remove from heat and serve.
