Rice Pudding

This recipe is similar to the Lion House Rice Pudding recipe, but it has more rice and a few other adjustments. My mom always made it when I was growing up, and I LOVE it! I eat it cold, but you can eat it hot too!


6 cups cooked rice
6 cups milk
1/4 cup powdered milk
2 TBS cornstarch
1/2 tsp salt
1 1/4 cups sugar
4 eggs
1/4 tsp nutmeg
1/4 tsp cinnamon
2 tsp vanilla


Combine milk and powdered milk together in a sauce pan and heat till scalding. In a bowl, combine sugar, cornstarch and salt and mix together. Add this to the milk while stirring constantly. Continue to stir over medium heat until thick and creamy. Add the cooked rice and bring to a boil. 
In a separate bowl beat the eggs. Add a small portion of the hot rice mixture to the eggs while beating constantly. Then add the egg mixture to the pan and stir until thickened. Add spices. 
Serve hot or cold.
