Spread peanut butter each piece of Texas toast. Slice bananas into 1/4 inch pieces. Press the bananas firmly into the peanut butter on half the slices of bread, as to ensure they stick. Using the remaining pieces of bread, make sandwiches, with the peanut butter side facing in.
Preheat the griddle to 350 F.
Mix eggs, milk, vanilla, cinnamon and salt in a bowl. Dip the bread into the egg mixture and place on griddle. Cook till golden brown and then flip the toast to the other side. Spread a little butter on the tops of each piece of toast.
