Confetti Cake Ice Cream Sandwich

Getting an ice cream maker and cookies both, for my birthday, inspired me to make this yummy treat! 


Ingredients:

Ice cream:
2 cups heavy cream
1 cup milk
2/3 cup sugar
2 tsp vanilla extract
2 TBS sprinkles
Cake Mix Cookies (confetti cake)
8-12 Cake Mix Cookies (chocolate, or other)

Directions:

Combine cream, milk, sugar and vanilla in a mixing bowl. Stir until sugar is dissolved. Refrigerate 1-2 hours and then pour into the ice cream maker. Follow manufacturers instructions.

Meanwhile, place the confetti cake cookies in the blender and blend into fine chunks. During the last 5 minutes of freezing add the cookie crumbs and sprinkles. Once the ice cream maker is done, freeze the ice cream for about 4 hours. (Refrigerating the other cookies during this time would be smart)

Using an ice cream scoop or a large spoon, scoop a tennis ball size of ice cream (yes, you want it to be round as well). Place the ice cream on the chilled cookies and make a sandwich. Repeat with all the cookies. Place them in an airtight container and freeze until serving.
