Growing up we always called No-Bake cookies Chocolate Oaties, instead. I made them every Sunday, and they became my little-red-hen cookies. If you didn’t help make them then you didn’t get to help eat them. A little selfish perhaps, but these cookies are dang good! If you haven’t had them, it’s time to get cooking! They are really easy, super quick and very yummy! :)
These are traditionally eaten once they have cooled, but we always liked to eat them while they were still gooey and hot! One of my good friends always poured the hot mixture over vanilla ice cream for a great gooey sundae.
2 cups sugar
3 TBS cocoa powder
1/4 cup butter
1/2 cup peanut butter
1/2 cup milk
1 tsp vanilla
3 cups oats
Combine all the ingredients, except the oats and vanilla, in a pot. Heat to boiling, stirring constantly, until the butter has melted. Remove from heat and stir in the vanilla and the oats.
Spoon the hot mixture onto wax paper or tin foil, in cookie-sized mounds. Allow to cool several hours, until firm (or eat right away like me!). You can also eat it hot, over vanilla ice cream.
