My neighbor told me about this, so I tried it. Its such a great snack! The longer you freeze it the softer the Graham cracker gets, so it gets to be just like a real ice cream sandwich.
2 TBS peanut butter
8 Graham crackers, broken into squares (I used cinnamon grahams)
Mash banana and peanut butter together, until smooth. Mashing them in a zip lock sandwich bag is easy and easy clean up as well. When the banana is all mashed, you just cut a corner out of the bag and squeeze it out.
Evenly distribute the banana mixture onto 8 of the graham squares, and sandwich the mixture using the remaining 8 squares. Freeze for at least 2 hours (longer is great). Enjoy!
