I love fresh pineapple, and I am usually happy to eat it on its own. This week, when we got a pineapple, I decided to try something different, however, and I’m glad I did! I saw a similar recipe for grilled pineapple, and thought it sounded pretty good. Here is my version:
1 ripe pineapple
1/2 cup brown sugar
Soak the skewers in water for about 30 minutes.
Preheat your grill or oven to broil.
Cut the rind and core off of the pineapple. This can easily be done by cutting the top and bottom ends off the pineapple and then cut it in half lengthwise. Continue cutting the pieces in half lengthwise until you have 8 pieces. Then the core and rind can more easily be cut off.
Cut the pineapple into cubes. Place the pieces in a bowl and add the brown sugar. Stir to coat the pieces. Skewer the pineapple, pouring any remaining brown sugar on top of the skewers.
If grilling, grill the pineapple for 5 minutes on each side.
If broiling,place the skewers on a broiler pan or cookie sheet. Broil for about 5 minutes on each side, or until the brown sugar is golden and caramelized.
