Pineapple Pork Stir-Fry

I spent the weekend at my mom’s house and this is something she made for me. It is a really flavorful stir-fry, and I really enjoyed it!


1 lb. pork tenderloin, cut into 1-inch pieces
1 fresh pineapple (or 1 8 oz. can of pineapple)
1/4 cup pineapple juice
1 green bell pepper, diced
1 cup baby carrots
1 cup green onion, sliced
3 TBS corn starch
1/2 cup water
3/4 tsp garlic powder
1/2 cup soy sauce
3 TBS brown sugar
1/2 tsp ginger powder
2 TBS oil


In a bowl, combine the pineapple juice, water, garlic powder, soy sauce, brown sugar and ginger. Stir until smooth. Set aside.
Steam the carrots for 5 minutes. Meanwhile, saute the pork pieces in the oil. When the pork is mostly cooked, add the carrots, pineapple chunks, bell pepper and green onion. Fry until the pork is no longer raw, and then add the sauce mixture. Allow to simmer until thickened.
Serve over rice.
