There is a place in town that serves Italian Ice, custard and Gelati (the previous two served together). I loooove it so much (partially because of the yummy fruity flavors they carry) and I decided to try to make my own Italian Ice. I looked up some recipes, combined ideas, altered it to meet my own flavor needs and voila! This is the result! It is very light, fruity and yummy!
1 1/2 cup Sunny D (or any other orange juice)
1 1/2 cup water
1/2 cup sugar
1 tsp coconut extract
(This is super easy!)
Combine all the ingredients in a bowl and mix until the sugar has dissolved. Refrigerate for at least 2 hours. Place in an ice cream maker and make according to the manufacturers directions. After about 10-15 minutes my Italian Ice had stopped churning in the ice cream maker and was ready to be taken out.
For a very soft Italian Ice you can serve it right away.
Otherwise, freeze it in an airtight container for 1-2 hours before serving.
(If your freezer is very cold like mine, you may need to let the Italian Ice sit out for 5-10 minutes before serving, if it has frozen over night.)
