Eskimo Cookies

I grew up eating these cookies all the time! We ate them for snacks, frozen, not frozen, rolled up or just a loose mix. To me they are a classic. :)

Ingredients:

3/4 cup butter, melted
3/4 cup sugar
3 TBS cocoa powder
1 tsp vanilla
1 TBS water
2 cups oats
1/3 cup powdered sugar

Directions:

Mix the sugar into the melted butter. Add the cocoa powder, vanilla and water. Stir until evenly mixed. Add the oats. Press the mixture into a tablespoon, and drop each cookie onto a plate (it helps if the tablespoon is wet, so that the cookies don’t stick to it). Top the cookies with powdered sugar.
Freeze the cookies for at least 30 minutes before serving. Keep in an airtight container in the freezer.

Healthy Version:

2 ripe bananas
3/4 cup peanut butter
2 TBS cocoa powder (or hot cocoa powder)
1 tsp vanilla
2 TBS water
2 cups oats
1/3 cup shredded coconut (or you can still do powdered sugar)
Mash the bananas until no chunks remain. Add the peanut butter, cocoa powder, vanilla and water. Stir until evenly mixed. Add the oats. Press the mixture into a tablespoon, and drop each cookie onto a plate (it helps if the tablespoon is wet, so that the cookies don’t stick to it). Top the cookies with shredded coconut or powdered sugar.
Freeze the cookies for at least 30 minutes before serving. Keep in an airtight container in the freezer.
