Sweet Banana Muffins

This recipe came from my Aunt and it has been hard for me to find any banana bread that I like as much… although Great Harvest does create tough competition. :)

Ingredients:

1/4 cup butter
1 cup brown sugar
2 eggs
2 TBS milk
1/2 tsp salt
1 tsp baking soda
2 cups flour (it is good with whole wheat flour)
4 ripe bananas, mashed
1/2 cup chopped walnuts or almonds, optional

Directions:

Preheat the oven to 350 F.
After mashing the bananas, add all other wet ingredients and mix. For an easy tip, try blending the bananas and the milk in a blender, and then adding the other wet ingredients. It is quicker than trying to mash them by hand. In a separate bowl mix the dry ingredients together. Add the dry ingredients to the bowl with the banana mixture, while stirring. Stir until well combined.
Pour the batter into pre-greased or lined muffin tins. Bake for 18-22 minutes, until golden brown on the tops.
Makes 12 muffins.
