One day, when I had some left over crepes in the fridge I got looking for something new and tasty to put in them. When I found the apple sauce I had the fabulous idea of making a classical dessert out of a crepe, and then the Apple Pie Crepe was born. It is a great breakfast and an even greater snack. I prefer mine hot (apple sauce and all) but they are good cold too. Substitute with sugar-free apple sauce for an even healthier snack…
1 cup flour
1 TBS sugar
1/4 tsp salt
1 1/2 cups milk
3 TBS butter, melted
2 cups apple sauce
4 TBS cinnamon
Whipped cream or ice cream (Optional)
Caramel sauce (Optional)
Combine all of the crepe ingredients in a bowl and mix with beaters or a wire whisk until smooth. Allow the batter to sit for about 10 minutes.
Heat a frying pan over medium heat. Coat the pan with a little butter. Put 1/3 a cup of the batter in the pan and tilt the pan in a circular motion to spread the batter on the bottom. Allow the crepe to cook until the bottom is golden brown. Flip and cook until the other side has browned. Repeat this process for each crepe.
While the crepes are still hot, put about 4 TBS of apple sauce on a crepe and spread it to cover the crepe. Dust the apple sauce with cinnamon. Roll the crepe and top with whipped cream, ice cream or caramel sauce if you prefer.
