Cheater Salsa

My mom made this one time for girls night, and we put it over baked potatoes with lime-cilantro dressing. It was very simple but incredibly flavorful! It is cheater salsa, because half of it is pre-made from the store, but with the special additions, no one will ever guess! I made it myself and tried it with various foods and fell in love with its versatility. It is good with chips and re-fried beans, over scrambled eggs, on salads or burritos and, of course, on baked potatoes! I am sure you will find many more uses for it… :)

Ingredients:

1 container of fresh pre-made salsa (check the produce section at the grocery store)
1 can of black beans
1 cup frozen corn
1 fresh lime

Directions

Drain and rinse the black beans, and thaw the corn with cold water. In a mixing bowl, combine the pre-made salsa, the beans and the corn. Stir to mix, and top with fresh lime juice. 
I promise, that’s all you have to do. It’s great!
