White Chicken Chili

I like many different types of Chili, but Limi doesn’t. One time we had a chili pot-luck at the church and I thought it would be fun to bring some too. Limi wasn’t excited though, because of course, he doesn’t like chili. I made this recipe, however, and it totally surprised him! He loved it and even went for seconds! I made it again a few months later and he still loved it! It is simple and quick, and very tasty!


1 pound chicken breasts, cubed
1/4 cup purple onions, chopped
1 TBS garlic powder
1 TBS vegetable oil
2 cans of Northern white beans, drained and rinsed
1 cube of chicken bouillon
1 cup water
2 cans of chopped green chilies
1 tsp salt
1 tsp ground cumin
1/2 tsp black pepper
1/4 tsp cayenne pepper
1 cup sour cream
1/2 cup whipping cream
Saute the chicken, onions, garlic powder and vegetable oil in a large pot over medium-high heat, until the chicken is cooked. Add all the remaining ingredients to the pot, except for the sour cream and the whipping cream. Allow the chili to simmer for 20 minutes, stirring occasionally. Then remove the chili from the heat and add the sour cream and whipping cream. Stir to combine then serve.
