Zucchini Zuppa

Ok, confession time… I HATED this soup growing up. I think it was something about the Italian spices, and of course the zucchini, but I detested even the sight of it. My mom tried revamping it many times to get us to eat this, but I never budged… until about 10 years later when my sister made it. She brought some over for me and it smelled heavenly. I don’t know if it was the TLC of my sister making the soup or the maturity of my taste buds, but the soup was divine! I made a whole pot of it the next week! Don’t be turned off by the fact that this soup has zucchini in it, you will regret not making it. :) (Never mind my pictures…. I am no photographer… yet!)


1 cup celery, diced
1 pound spicy sausage
1/2 cup purple onion, diced
3 zucchini, peeled and diced
1 can (14 oz) diced tomatoes with liquid
24 oz V-8 juice
1 tsp salt
1/2 tsp Italian seasoning
1/2 tsp oregano
1/2 tsp basil
1/2 tsp garlic powder
1 green bell pepper, diced


Saute the celery, onion and sausage for about 10 minutes, in a large pot over medium-high heat, until the sausage is completely cooked. Then add the remaining ingredients, except for the bell pepper and the cheese. Allow the soup to simmer for 20 minutes, then add the bell pepper. Simmer for another 10 minutes.
Serve topped with Parmesan cheese and with garlic bread on the side.
