I have tried a couple breakfast casseroles, but every time the potatoes come out the texture of mashed potatoes… I don’t know about you, but I like my potatoes to be crispy or at least firm, unless I am specifically going for mashed potatoes. Needless to say, those casseroles didn’t make the cut. So finally, I decided to make my own version! This is the result. It is the simple version, but would be great with spicy sausage and red bell pepper added to the mix!
Ingredients:
4 potatoes (baked or microwaved until soft)
8 eggs
1/3 cup cream
1/2 TBS garlic powder
2 cups nacho cheese
Salt and pepper to taste
Directions:
Preheat the oven to 350 F.
Dice the potatoes into 1-inch cubes. Spray an 8×8 baking dish and place the potatoes in the dish. In a bowl, whisk the eggs, cream, garlic powder, salt and pepper together. Pour the egg mixture over the potatoes. Drizzle 1 cup of the nacho cheese over the top of the potatoes and eggs.
Bake for 35-40 minutes, until the top is golden brown, and a knife inserted into the center comes out clean (there may be a little residue from the nacho cheese). Drizzle the remaining nacho cheese over the top and serve.
