Tropical Oatmeal

Oatmeal is good and healthy and all, but on its own it doesn’t have the most exciting flavor. Even adding sugar or honey only goes so far to enhance it. If you find yourself running out of ideas to switch it up, this is something that will liven up your hot cereal with a fun little twist. :) I used to make blueberry oatmeal all the time, and I still enjoy it, but this is something that my husband has actively declared is much more delicious, and happily eats. Maybe it’s the coconut milk… :)


1 3/4 cup water
a dash of salt
1 cup old fashioned oats
1/2 cup peaches or mangoes with juice (I use the peaches packed in 100% natural juice)
1 tsp coconut extract
1 TBS sugar, honey or agave
1/2 cup coconut milk


Put the water and salt in a pot and bring to a boil over medium-high. Add the oatmeal and simmer for 3-5 minutes. If the peaches are not already cut up, cut into 1/4-inch pieces. When the oatmeal is finished simmering, add the peach pieces and juice, coconut extract and sugar. Stir together. Pour the oatmeal into 2 bowls and top with coconut milk to serve.
