I have been trying to eat better, and have especially been focusing on getting more produce into my day. There are only so many times you can eat carrot sticks and apple slices for snacks though. So the next step up is to incorporate the produce into your meal plans! But really don’t want to eat a spinach salad for breakfast… So this is my idea! Yes, I must admit, I was inspired by some commercial about a spinach omelet sandwich, but truthfully, I can’t make omelets to save my life. But this tasted great! I didn’t feel like a cow going for it’s daily dose of alfalfa or anything. Even my husband liked it! That is impressive! Seriously though, don’t let the presence of spinach scare you away. Everything was a great combination, and a great way to start the day!
4 pieces whole wheat bread
2 cups spinach (not tightly packed)
2 TBS butter
1 tsp garlic powder
Salt and pepper to taste
Melt the butter in a frying pan over medium heat. Crack the eggs into the pan, break the yolk (unless you like runny eggs….), sprinkle with garlic powder, salt and pepper and cover. Cook for 3-5 minutes, until the eggs are cooked through. You may need to flip them over for a minute or two to help cook the other side (I like my eggs totally cooked!). Divide the eggs into 4 pieces (if they have run together like mine always do) and remove from the heat.
Meanwhile, toast the bread. Cut the avocado and mash it up. Spread the avocado over the pieces of toast and lay about 1/2 cup spinach over each piece of toast. Slice the tomatoes thinly and put on top of the toast. Top the toast with the cooked eggs, and serve!
