Lucky Guacamole

I know this one isn’t posted on my normal posting days (Monday and Friday) so I hope it didn’t sneak up on you (like the Leprechauns)! Well here is a super yummy guacamole recipe for you to celebrate St. Patty’s day… or any other day for that matter. Don’t assume that this recipe will only be good on March 17th or else you will be missing out all year long!
It does specialize green green green ingredients, and you will love it so much! And you are going to be lucky you made it… you know, so the Leprechauns don’t freak out or anything. But for real. Your family, friends, guests, everyone will love you for it!
When I was making it I just grabbed a bunch of green things from my fridge and threw it together. I surprised myself with how good it was! You don’t even need burritos or anything to eat it with, just use tortilla chips… or a spoon. Just saying! This guacamole is zesty and zangy! Yum!

3 Avocados
1 lime
1 jalapeno
1 small green bell pepper
1/2 cup cilantro leaves
1 tsp garlic powder
1 tsp salt

Finely dice the bell pepper and the jalapeno. Juice the lime, and try to get some of the pulp as well. Cut the avocados in half, remove the pit and scoop the flesh into a bowl. Pour the lime juice over the avocado and mash roughly with a fork, leaving small chunks. Add the diced peppers, cilantro leaves, garlic powder and salt. Stir until well mixed. Serve however you like… don’t worry about saving the leftovers… there won’t be any!
