This April Fools prank worked great! We have had several treats in the house this week and my husband is quite sick of them all. When he walked in the kitchen and saw these he was dismayed that I had made cupcakes… just another treat! He was surprised when I told him that they weren’t cupcakes but we were eating them for dinner. He got really close to the Meatloaf Cupcakes and took a big whiff before he could fully believe me though!
You don’t have to eat these on April Fools Day only, though! They are really good and are a good meatloaf recipe for any time! I like the change of sauce and filling, and it is always fun to have them in the cupcake form rather then a loaf.
1 pound ground beef
1/2 cup oats or plain bread crumbs
2/3 cup milk
1/2 cup shredded cheddar cheese
1/2 cup BBQ sauce (I used Sweet Baby Rays – Sweet N Spicy)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp garlic powder
3 cups mashed potatoes
Preheat the oven to 375 F.
In a bowl, combine all the ingredients (using only 1/4 cup of BBQ sauce), except the mashed potatoes. Stir to combine. Put 1/4 cup of the meatloaf mixture in each muffin cup. If using muffin liners, use the foil ones rather than paper because the meatloaf will stick to the paper and burn. After each muffin cup has been filled, brush 1 tsp of the remaining BBQ sauce on each meatloaf cupcake.
Bake for 45 minutes, or until the meat is fully cooked (internal temperature of 165 F.).
Place the mashed potatoes in a piping bag with a decorative tip. Squeeze the mashed potatoes in a circular motion around the top of the meatloaf cupcake, as if you are icing a regular cup cake.
