I must admit that I was inspired by a recipe on Our Best Bites for apples covered in chocolate and peanut butter goodness… sounds great for a treat but I couldn’t convince myself that this is a snack I would feel guiltless giving a little kid for a mid-afternoon snack. I mean, I know we all do it from time to time, but really…
Apple Nachos is where I stop trying to convince myself that healthy snacks can’t be sweet. Honey metabolizes much slower than white sugar and thus the sugar-spike won’t happen. Besides, honey has lots of nutritional benefits! If you still aren’t convinced, just give it a try, and when you smell the wonderful aromas coming from the honey sauce, all doubt and reason will fly away and you will find yourself snacking on these without any hesitation. When something smells like this does you know it is going to be good!
4 Gala or Pink Lady apples
1/4 cup honey
1/4 cup peanut butter
2 tsp vanilla
1 tsp cinnamon
1/4 cup coconut flakes
1/4 cup chopped almond
Combine the honey, peanut butter, vanilla and cinnamon in a sauce pan. Heat over medium-low, stirring occasionally, until everything has melted together and forms a smooth sauce.
Meanwhile, wash and cut the apple in thin rings. I dipped mine in Emergen-C and water so that they wouldn’t turn brown (anything like this with Vitamin C in it works).
Arrange the apples on a plate and drizzle the honey sauce over the apples. Top with coconut flakes and chopped almonds. Eat immediately.
(If you wait too long the apples will soften slightly)
