As I have mentioned before, we eat a lot of pancakes. At least 2 or 3 times a week, no kidding. My husband always requests them and, if I didn’t mix them up every now and then, I would get sick of eating them. So here is another pancake variation! Unlike my normal sweet-and-fruity breakfast recipes, this is a sweet-and-savory recipe. A lot of people eat pancakes with a side of sausage, and a lot of people even put syrup on both their pancakes and their sausage. So why not combine all three?! This is just as quick as making regular pancakes, but a nice little twist. :)
3 pre-cooked sausage patties (the kind from the freezer section)
3 cups prepared pancake batter (we just use pancake mix and water)
Preheat the pancake griddle to 350 F.
Heat the sausage patties in the microwave according to the directions on the package. Then cut them into small pieces (about 1/4-inch pieces). I found it easiest to cut them into thin strips and then turn the strips 90-degrees and cut them again.
Add the sausage pieces to the pancake batter. Pour 1/2 cup of batter onto the pancake griddle, for each pancake and spread it out into a circle-like shape. Cook the pancakes for about 3-5 minutes, until the bottom is golden brown. Flip and repeat.
Makes 6 pancakes.
