Growing up in Idaho we ate a lot of potatoes, and I LOVED it! I chose potatoes over bread any day and it was one of my staples when I first went to college. I have toned down the tater-lovin’ to spare my husband, but I still love to cook with them. Occasionally you will see recipes like this, where I just couldn’t resist the use of a crisp and spiced potato. My family calls these type of potatoes “Tikas Potatoes” – Lord of the Rings fans – I guess they read about some inn-keeper, in one of the books, named Tika. This inn-keeper made crisp potatoes which inspired my mom to roast her potatoes in this fashion. We have been big fans and this is my personal favorite way to cook potatoes.
This recipe specifically was inspired by something my brother always says, “The only thing that would make it better is if it tasted more like pizza”. I am pretty sure he even said that about a breakfast food once… French toast or something like that…. hmmm. He is great, and in this case, making it taste more like pizza was a great idea!
This is a simple thing, but don’t be deceived. They are quite flavorful! Plus, there is a nice combination of sauciness and crispiness.
4 large potatoes
3 TBS oil
About 50 pepperoni slices (1 small package)
1 large green bell pepper
2 cups pizza sauce
1 cup shredded cheese
Wash (and peel, if you like) the potatoes. Bake or microwave them until they are cooked but still firm. Time varies depending on the size of the potato. Once cooked, dice the potatoes into 1-inch cubes.
Heat the oil over medium-high heat, in a large frying pan. Add the potatoes and saute, flipping occasionally, until the potatoes are golden brown and crispy (about 15 minutes). Season with salt.
Cut the pepperoni slices in half. Dice the green bell pepper into 1-inch pieces. Just before the potatoes are done frying, put the pepperoni and green pepper in a second frying pan. Saute over medium-high heat for about 3-5 minutes, until everything is hot and the flavors are beginning to combine. Add the pizza sauce and heat.
Serve the potatoes covered with the pepperoni sauce and topped with shredded cheese.
