Grilled Fruit Kabobs

Ok, I am so happy about the fact that it is summer! I am not a fan of the cold. Well needless to say, I am whipping out all my summer recipes (and still working on posting them all)! 
If you have never had any version of fruit kabobs then you might want to give them a try! The fruits you decide to use are interchangeable, but be sure to take into account how the fruit might taste if it is warm/cooked. If you wouldn’t put it in a pie or cook it with meat then it might not be good on a grilled kabob. Grapes for example… not the greatest when they are grilled. But then again, everyone has their preferences.
I paired these fruits with a sweet and tangy glaze, to enhance the flavors and help caramelize the juices. These kabobs are great on their own or served with ice cream!

Ingredients:

1/2 cup honey
1/2 cup frozen pineapple concentrate
2 bananas
1 fresh pineapple
1 box of strawberries
About 20 wooden skewers

Directions:

Soak the skewers in hot water for about 30 minutes before cooking the kabobs.
If cooking on the grill, heat on high. For the oven, preheat to high-broil.

Slice the pineapple into 1-inch cubes. Wash the strawberries and cut the tops off. Cut the bananas into 1-inch chunks. Skewer the fruit.

Whisk the honey and pineapple concentrate together. Brush the glaze over the fruit. As the fruit grills or bakes, continue to brush glaze over the fruit as needed.

When the fruit begins to caramelize, remove from the grill or oven, and serve.
