Watermelon is my favorite fruit! And I love that it is summer because there is plenty watermelon to be had! Although I absolutely love eating it just by itself, I thought it would be fun to put it in a salad form. I wanted to put Greek yogurt on the salad, and the first thing that came to mind when i thought of fruit covered in yogurt was a Waldorf Salad. My mom always made Waldorf with apples, walnuts, lemon yogurt and sometimes a few other ingredients. My take of this Waldorf salad, uses Watermelon, vanilla Greek yogurt, grapes and cashews!
Here is a little watermelon picking tip: Knock on the watermelon and find one that has a hollow thud. Then pick the watermelon up and feel the weight. If it is heaver than it looks, and it has the hollow thud, it is a good watermelon!

Ingredients:
1 cup watermelon, balled or diced
1 cup purple grapes
1/2 cup vanilla Greek yogurt
1/2 cup cashews, chopped
Directions:
Wash the grapes, and drain any existing fluid from the watermelon. Lightly dry the fruit with a paper towel, so that the yogurt will stick to the fruit.
In a large bowl, combine all the ingredients and mix until evenly coated. Serve immediately. Keep the leftovers refrigerated.
