BBQ Slaw Burger

BBQ Chicken and Cole Slaw is a summer classic, so it only makes sense to throw them together on a hamburger bun for a great dinner! They taste great together, and eating them in burger form is as fun as Sloppy Joe’s! I love it! Seriously though, serve this burger with a side of watermelon, and infused water and you have the perfect summer meal, picnic or otherwise!
What is even greater about this recipe is that it requires very little cooking! This is even greater for summer, because your kitchen won’t heat up! All that requires cooking is the chicken, and you can either put it in the crock pot, boil it in the BBQ sauce for about 20 minutes (this is what I did), or even grill it out side! The rest requires no heat preparation! Here is an even better idea! Plan to make this twice, but cook all the chicken the first time! Then you can freeze the chicken until you are ready for it the next time, and just re-heat it in the microwave! This just keeps getting better and better!

Ingredients:

4 chicken breasts (still frozen)
1 bottle (18 oz) Sweet Baby Ray’s BBQ sauce (we like the Sweet and Spicy flavor)
1 bag (14 oz) Cole Slaw mix
2/3 cup sour cream
1/2 cup mayo
2 TBS sugar
1/2 tsp salt
Juice from 1/2 a large lemon
8 (1 package) 100% whole wheat buns

Directions:

Put the frozen chicken breasts in a large pot on the stove and add all the BBQ sauce. I like to put a little water in the bottle and shake it up to get extra sauce out as well. Cover the pot with a lid and turn the heat to medium-high. Allow the chicken to simmer until the center is no longer pink (this takes about 20 minutes). Then remove the chicken pieces from the pot, shred them and return them to the BBQ sauce.
Meanwhile, make the coleslaw. Put the cole slaw mix in a large mixing bowl. In a small bowl, combine the sour cream, mayo, sugar, salt and lemon juice. Mix until smooth and then pour over the cole slaw. Stir until the cole slaw is evenly coated.
Put the shredded BBQ chicken on the bottom half of the hamburger bun, top with cole slaw and the top half of the hamburger bun. Enjoy!
