Chocolate Whole Wheat Waffles

In keeping with the tradition I set with Muffin Monday, today will be Waffle Wednesday! Chocolate (Whole Wheat) Waffles are yet another food my mom made for my siblings and me, when we were younger. We actually got this recipe from an “exchange student” (she only lived 4 hours away from us, but wanted to go to a leadership school in our area) who lived with us for a year. I never knew until much later that the waffles were made with whole wheat, or else I may not have eaten them so readily. Yes, I was a bit picky…. mostly avoiding what I thought would not taste good. Whole wheat was one of those things.
These waffles taste great though! Whether or not you are a whole wheat fan, you will probably love these waffles! They are perfectly chocolaty (not too much and not too little) and are great with a little bit of butter and syrup or just plain for snacking (My sister and I used to grab a couple extras after breakfast to put in our backpacks as a snack for later – they were perfect!).

Our new favorite way to eat these is to dip them in vanilla yogurt (waffles can be hot or cold)! Yogurt is a much better option than butter and syrup, and it is a wonderful contribution to the waffles as well!
 

Ingredients:

1 1/2 cups whole wheat flour
1/2 cup cocoa
2 tsp baking powder
1/4 tsp baking soda
1 cup milk
1/2 cup brown sugar
3 TBS vegetable oil
3 egg whites
1/8 tsp salt
Optional: 2 TBS mini chocolate chips

Directions:

Preheat the waffle maker to your preferred temperature. I like moderate temperatures for these waffles (on my waffle iron it would be “3” out of 5).
Combine the dry ingredients in a bowl until well mixed. Add the wet ingredients and whisk together until mostly smooth. Lastly add the mini chocolate chips, if you prefer.
Spray the waffle maker with non-stick spray before making each waffle and pour the waffle batter with 1/3 of a cup. Cook for 3-5 minutes, or until the light on your waffle maker signals the waffle is done.
Top with butter and syrup before serving. Enjoy!
