Blueberry Breakfast Strata

Despite what it seams, most mornings I am perfectly content to eat a bowl of cereal for breakfast. Actually, it is usually 2 bowls of cereal, and most likely Multi-Grain Cheerios. I also eat it for snacks (mid-morning, mid-afternoon, and sometimes mid-night) and sometimes for lunch too. I really love cereal, so the fact that I am posting all these breakfast ideas tells you just how awesome they are.

The ladies in my church decided to put together a cookbook, to share our best recipes with each other. This was a great idea, until the men heard about it. Needless to say, there are a few recipes for Possum stew, and Elephant Soup. I am still not sure which is a joke and which is a serious recipe from a Southern-food-loving man. But these exceptions aside, I have found some great recipes in the cookbook. Some of the recipes I had never heard of before, this one being such a case. Blueberry Strata is a combination of a classic breakfast; French toast, blueberries and bacon. But instead of having each of them separate, they are combined into one dish. Think about it. Sweet maple cinnamon french toast, juicy blueberries and savory bacon, all in one! Genius.

Some tips with this recipe: Use an 8×8 pan, or something larger. I made the mistake of using an 8-inch round cake pan. This is not the same thing, and there is not enough space. Perhaps a 9-inch round cake pan would have been better.

Also, don’t use a spring-form pan. The egg mixture is too runny, and leaks out the bottom. I learned this from hard experience. Haha.

I used frozen blueberries, which tasted great, but they weren’t firm by the time they were done baking. This is just fine, but if you prefer it, fresh blueberries would be excellent.

Lastly, I decided to make my life slightly easier by purchasing pre-cooked bacon. You can cook yours the morning of, but that is a lot of prep. If you want to cook it yourself, I would suggest making it earlier, and refrigerating it until you are ready.



1 loaf Cinnamon Swirl Bread

1 package (2.1 oz) pre-cooked bacon

2 cups blueberries

8 eggs

3/4 cup heavy cream

1/4 cup milk

1/2 cup dark maple syrup


Slice the bread into 1-inch cubes. Cut the bacon into pieces. Whisk the eggs, cream, milk and syrup together.

In an non-stick (or greased) 8×8 pan, layer 1/3 of the bread and 1/2 of the blueberries. Put another 1/3 of the bread and all the bacon on. Add the final 1/3 of the bread and the remaining blueberries. Press down and pour the egg mixture over the layers.

Soak for 1 hour.

Preheat the oven to 400 F.

Bake the strata for 45 minutes, or until cooked through. Serve with extra maple syrup drizzled over the top.
